Sweet Potato Seared Cod

Ingredients to make Sweet Potato Seared Cod

Sweet potato, peeled, 250 g
Tap water, 800 ml
Olive oil, 1 teaspoon
Cod, raw, 360 g, 2 x 180g fillets
White pepper, ground, 1 g, 1 pinch
Ground nutmeg, 1 teaspoon
Skim milk, 120 ml
Sea salt, 1 g
Lemon, 1 lemon, cut into wedges

Directions to make Sweet Potato Seared Cod

Step 1:Peel the sweet potato and cut into rough cubes. Pour water into a medium saucepan, place over high heat and bring to the boil. Add the sweet potato and boil for 5 minutes or until tender, drain, set aside and keep warm

Step 2:Drizzle the oil over the fish fillet and sprinkle with pepper. Heat a non-stick frypan over medium heat, add the fish and cook for around 2-3 minutes each side. Transfer to a plate and keep warm.

Step 3:Add the nutmeg, skim milk and a pinch of sea salt to the sweet potato, mash with a fork or potato masher until smooth. Divide between two plates and top with the fish. Serve with lemon wedges.

Ingredients to make Baked Cod with Lime and Cilantro

2 pounds cod or flounder fillets
1/4 teaspoon pepper
1 tablespoon dried minced onion
1 garlic clove, minced
1 tablespoon olive or vegetable oil
1 1/2 teaspoons ground cumin
1/4 cup minced fresh cilantro or parsley
2 limes, thinly sliced
2 tablespoons reduced-fat margarine, melted

Directions to make Baked Cod with Lime and Cilantro

Step 1:Place each fillet on a 15-in. x 12-in. piece of heavy-duty foil. Sprinkle with pepper. In a small saucepan, saute onion and garlic in oil; stir in cumin. Spoon over fillets; sprinkle with cilantro. Place lime slices over each; drizzle with margarine. Fold foil around fish and seal tightly. Place on a baking sheet. bake at 375 degrees for 35-40 minutes or until fish flakes easily with a fork.
