Baked Cod with Garlic and Fresh Herbs

baked codThis has always been one of my most favorite seafood recipes. I remember my mother cooking this dish for me and my brothers for as long as I can remember. The Cod bursts with flavor!

1-1/2 lb (700 g) cod fillets (about 1-inch thick at top), cut into 4 pieces

About 2 tbsp extra-virgin olive oil

Sea salt + freshly ground pepper to taste

1/4 cup panko breadcrumbs

2 large cloves garlic, pressed or minced

1/4 cup finely chopped parsley

4 tsp unsalted butter, cut into 12 small cubes
Brush cod with oil on both sides and sprinkle with salt and pepper. Place on rimmed baking sheet lined with parchment.

In medium bowl, gently mix breadcrumbs, garlic and parsley with fork. Sprinkle over cod. Dot cubes of butter over cod.

bake on rack above centre in preheated 400F oven until fish barely flakes with fork, 8 to 9 minutes for an inch of thickness. Place under broiler 1 minute to crisp topping slightly. Do not overcook.

Makes 4 servings.
